Rocket & Feta Crêpe Filling​

Crêpes can be eaten all year round, either as a savoury or an indulgent dessert. Here is one of my favourite savoury filling, a tasty rocket and feta recipe that is great served as a light lunch or a satisfying dinner for you, the family or a group of friends. FOR THE SAUCE

  • 2 Tsp. Mustard
  • 2 Tbsp. Yogurt
  • 1 Tbsp. Tahini

FOR THE FILLING

  • 100 g Rocket salad
  • 100g Feta
  • 50g Pine Nuts
  • 1 Tsp. Nigella seeds
  • 1 Chilli (optional)
  • Few sprigs of dill
  • Few sprigs of basil
  • Drizzle of olive Oil
  • Salt & Pepper

Method

FOR THE SAUCE

In a small bowl, mix the mustard, yogurt and tahini until combined.

 FOR THE FILLING

Lay the crêpes on a plate, scatter with the rocket, dill and basil, crumble some feta on top and garnish with roasted pine nuts, nigella seeds and finely sliced chilli (optional).

Finish with a couple of spoons of the mustard and tahini sauce.

    Really not into crepes so I thought I’d just take a quick look but I ended up checking everything. I had tried cooking similar stuff before and that online delivery service, Feast Box, really helped me out try some ingredients that are hard to find like some listed above. Anyway, will forward this page to a couple of friends who are starting to get fond of cooking!
