Lilac Wine

I think this year I went a little mad for Lilac and this is the latest creation!!! I loosely based this on a classic Provençal Vin D’orange; Orange Wine recipe – without adding any spice since i think the floral notes of the Lilac are strong enough.

I used a light rosé wine but you could easily use a dry white, not too sweet or floral though as you don’t want to spoil the delicate Lilac flavour.

Ingredients

  • 500ml Rosé Wine
  • 100ml Vodka
  • 100g Sugar
  • 10 Lilac flower head (approx. 100g)

Method

Clean the Lilac and remove the stalk keeping only the small flower clusters

In a glass bowl alternate layers of sugar and flower clusters, repeat the process when all the flowers have been used

Add the vodka & the rosé wine

Leave to macerate for a maximum of 7 days stirring every day to ensure that the sugar is fully dissolved and that all the lilac flowers are fully submerged

After 7 days filter & transfer to a clean sterilised bottle and leave for a further 1o days to settle

Serve cold for dessert or aperitif!
