If you are like me and not a big fan of milk or if you after a plant based alternative then this is the one for you…. My little chocolate pot made with almond milk!!! Not only is it a delicious treat but the combination of creamy texture and crunch from the roasted almonds and cacao nibs is just heaven on a spoon!!!!
This is the perfect dessert super easy to make and absolutely delicious…

Method
In a heavy bottom saucepan warm up your milk – break your chocolate into pieces, add to the milk and warm up gently.
In a separate large bowl whisk the eggs and add the maple syrup slowly.
In another small bowl add your corn flour and pour about 1/2 cup of the warm milk onto it to dissolve the flour completely. Once dissolved add to the milk and stir for about 2 minutes.
Pour the mixture over your eggs and give it a good stir and pour back into the pan. Continue stirring with a wooden spoon for about 10 minutes or until you get the consistency of a thick custard.
When thick pour into your ramekins. Let it cool and then leave in the fridge for at least 4 hours.
Serve cold with roasted flaked almonds and Cacao nibs for a little added crunch.
