Spelt Crispbread Crackers

 LOVE these spelt crispbread crackers, perfect for a Christmas gift. I made mine with fennel seeds but you could use all sorts of nuts or seeds depending on what you are serving them with, like hummus, cheese or any kind of festive dip. You could even try replacing the salt with sugar and serve with ice cream 🙂.

Ingredients

  • 1 Cup whole spelt flour
  • 1 Tsp. Baking powder
  • 2 Tbsp. Water
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Ground flax seed
  • 2 Tbsp. Fennel Seeds
  • A pinch of sea salt flakes

Method

In a large bowl mix the flour, baking powder and salt – Add water and oil a little at a time and knead until you obtain a smooth (not sticky) dough. If your mixture feels a little dry add more water no more than a tablespoon at a time

Lay a piece of parchment paper the same size of your oven tray and roll out your dough on the top as thinly as you can.

Sprinkle all the seeds on the top, fold in half and roll again as thin as you can.

Cut out your crackers into desired shapes, this works really well with a pizza cutter.

Bake for 15-20 minutes until crispy but keep on eye on them they can turn very quick especially if really thin
