Parsley Salad With Raspberry Vinaigrette
This is a salad that we served in a restaurant on the beach in St Tropez where I used to work as one of my first jobs. Even though that I was a waitress we had to do the salad prep in the morning and I used to love doing the prep for this – prepping the parsley used to smell so delicious and to this day the smell of parsley reminds me of a summer morning.
Parsley is a high source of Vitamin A, flavonoid antioxidants that help bloating and among lots of other benefits is also an antibacterial.
This is brilliant summer ready fresh salad – complemented by naturally juicy, sweet tomatoes and the delicate scent of raspberries – is a must try summer delight.

FOR THE SALAD
- 2 Large tomatoes
- 1 Red onion
- 200 g Curly parsley
- Sea Salt and Pepper
- Pinch of Sumac (optional)
FOR THE R A S P B E R R Y VINAIGRETTE
- 6 Fresh raspberries
- 1 Tbsp. Red wine vinegar
- 3 Tbsp. Extra virgin olive oil
- Sea Salt and Pepper to taste
Method
In a blender put all the vinaigrette ingredients and blend until it is fully mixed.
Chop the tomatoes in small chunks, slice the onions and chop the curly parsley discarding the stalks
(you may use them in a stew, soup or you could even make a parsley pesto if like me you do not like to waste!)
Place all the salad ingredients in a large bowl finishing with the Parsley. Add the sumac and season to taste.
Serve with the vinaigrette on the side.
