Autumn Fruit on Toast

Les tartines – or Autumn fruit on toast – A simple but deliciously nutritious evening meal. It has all the favourites in one bite: crunch, delicate sweetness from the grapes and figs combined with the tang and earthy flavour of goat’s cheese… mmm. I can’t make my mind up which of the two I preferred as they were so different. Take a bite from the grape version and one from the fig to make a comparison and let me know which you prefer….

Ingredients

  • 1/2 Sourdough stick
  • 1 Bunch of grapes
  • 3 Medium figs
  • 100 g Ricotta cheese
  • 50 g Hard goat’s cheese
  • Flaked almonds – small handful
  • Chopped hazelnuts – small handful
  • Thyme – few sprigs
  • Salt & pepper

Method

Preheat your oven to 200°C/392°F.

Cut the bread lengthways and place on a tray. Drizzle with olive oil and bake for 5 minutes.

In a bowl mix the ricotta cheese and half the grated goat’s cheese and spread on each slice of the bread.

Garnish one baguette with raisins, almonds and grated goat’s cheese and the other with figs, hazelnuts and the rest of the grated goat’s cheese.

Sprinkle with a few thyme leaves and season to taste.

Bake for a further 8-10 minutes or until the fruit goes soft and the nuts are golden brown.
