Baked Cod with Lemon & Mustard

Baked cod, lemon and mustard is a quick and tasty meal ready in just 40 minutes! The preparation is so easy, and with healthy, light fish, baked with fresh vegetables, feta cheese and mustard, it’s a real one pot, winter warmer.

FOR THE DRESSING

  • 2 Tsp. Grey Poupon Mustard
  • 1/4 Tsp. Paprika
  • 3 Tbsp. Olive oil
  • 100 ml White wine
  • Salt and pepper

TO BAKE

  • 2 Cod fillets or halibut (135g each)
  • 250 g Potatoes
  • 250 g Leeks
  • 100 g Feta
  • 25 g Parsley finely chopped
  • 1 Lemon unwaxed - sliced
  • Olive oil

Method

Preheat your oven to 200°C/400°F.

Wash and clean your vegetables and fish fillets.

Cut the potatoes into quarters and cook in boiling water until soft about 20 minutes. Cut your leeks into thin slices and cook for 10 minutes. Add all the ingredients for the dressing in a bowl and cover the fish completely.

In an oven proof dish drizzle a little olive oil and then place the potatoes, the leeks and lay your fish over the top. Cover with crumbed feta and parsley and finish with the lemon slices.

Drizzle with olive oil and bake for at 200 c for 17-20 minutes. Serve immediately.
